Fresh garlic is ideal when preparing dishes that call for garlic. The sooner you use fresh garlic, the better and sweeter the flavor of it will be. Check the freshness of garlic cloves by inspecting the skin. If it is bruised, soft, or shriveled, it is not fresh.
